cupcakes for jill and corbin:

i have been watching jill on twitter as she has tried out and shared some yummy new recipes (privatly drooling behind my computer screen), when she mentioned rhubarb i knew i had to tell her about these. i was skeptical at first; i grew up with a giant rhubarb plant growing in our garden that bordered my play area. the giant stalks and leaves were always bothering my playtime in my sandbox and dropping spiders on me. so naturally i grew up automatically discarding the thought of eating or associating with anything rhubarb, no matter how much people guaranteed me it was delicious. are you tired of my story yet? well, moral or point or whatever is here i am twenty some odd years later and my pallet has grown imensley and i eat a lot of things that i used to pretend i was allergic to. that all being said...
here is a delicious recipe for you to try:
for the cupcakes;
1 c. (2 sticks) sweet butter, softened
1 c. sugar
2 c. self-rising flour
4 eggs
1 tsp. vanilla extract or flavor
1 c. cooked rhubarb

for the frosting;
1 c. cream cheese, softened
1 1/2 c. confectioners sugar, sifted
1 tbsp. lime juice
1/2 tsp. ground ginger
1 1/2 tbsp. roughly chopped candied ginger

preheat the oven to 400 F. place paper cups in the muffin pans. combine all the cupcake ingredients, except the rhubarb, in a medium bowl and beat with an elctric mixer until smooth and pale, about 2 to 3 minutes. spoon the batter into the cups. bake for 20 minutes (check at about 15). remove from oven and cool for 5 minutes. then remove the cupcakes and cool on a rack. hollow out a small hole in each cake and fill with one teaspoon of cooked rhubarb.

for the frosting, combine the cream cheese and confectioners' sugar, and beat briskly until soft and creamy. add the lime juice, ground ginger, and candied ginger and mix well. spoon onto cupcakes and garnish with candied ginger.
