a delicious mistake :: cookies!

when everyone started posting photos of the new "cookie butter" to grace trader joe's shelves on instagram, of course i had to run right out and buy some. we all tried a spoonful the second we were home, but then it sat, and sat, and sat in the cupboard. what did we do with it? toast? waffles? nothing seemed like it would be the right pairing - i know, i sound crazy...

while dreaming of a chocolate bar earlier i got the bright idea to make peanut butter cookies, then i remembered i had just used up the last of the peanut butter yesterday, this was going no where. so with a visit to the kitchen, i found the jar of cookie butter hidden in the cupboard and decided to give it a whirl- i mean, it is called c-o-o-k-i-e butter.

and you know what? it was a delicious mistake if i do say so myself! 

the end result was sort of a mix between a pretzel and a ginger snap and it was hard not to eat all of the batter up right there! so, of course i have to share with you!

1 cup unsalted butter
1 cup trader joe's cookie butter
2 cups white sugar
1 tablespoon molasses
2 eggs
2 1/2 cups of sifted flour
1 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon salt

cream together butter, cookie butter, sugar, and molasses then beat in eggs.

in another bowl mix together the flour and etc then slowly add in.

refrigerate for one hour.

roll into one inch balls and place on baking sheet, flattening each ball with a fork to create criss-cross pattern.

Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

optional: mix up powder sugar and milk to desired amount and drizzle/ or brush over cooled cookies.
